Asparagus is the vegetable that most signifies the arrival of spring. The spring sunshine provides the warmth and the spring rains provide the moisture needed, to encourage the emergence of the spears from the crown of the plant lying beneath the soil.

Fresh Australian asparagus is usually available from late August to December. However some growers delay cutting some of their asparagus plants whilst at fern stage. This allows for some late season’s harvests between January and March. Victoria thus has a longer growing season for asparagus than most other production areas in the world.
