David Hunter Originally from Scotland, David Hunter, Executive Chef at Queensland’s Golden Door Health Retreat, has been bowled over by the amazing quality, variety and abundance of fresh Australian produce - especially asparagus. And although David was traditionally trained and more used to cooking up hearty dishes to ward off the chilly Scottish weather, he has cheerfully accepted the challenge of creating a constant stream of lighter, healthier dishes for the lucky guests of the Golden Door Health Retreat. David loves asparagus and delights in using copious amounts of it in many of his popular dishes. “I like to cook it simply to allow the flavour to shine through,” says David. “It’s also very versatile, you can cook it in many ways and it suits the flavours of the cuisines of many countries. I especially like to use asparagus in salads and dishes where its shape adds interest and its colour adds eye appeal.” To find out more about the Golden Door Health Retreat, go to www.goldendoor.com.au Recipes
