Jo Simpson Jo Simpson's family has owned cafes and restaurants since she was ten years old and she has been in the business for twenty years. She has worked at Arthur's at Arthur's Seat, Cape Schanck Resort, Delgany's Portsea and Palmers in the city. She currently works at Fancy Bites Catering and also at the Courthouse Restaurant in Berwick, Victoria. Jo loves food - the tastes, textures and colours. She uses the plate as a canvas and her food as the artwork. "I eat, sleep and breathe food and I love to be creative, love to make healthy food that is delicious to eat and great to look at." She loves all and every vegetable and loves working with game meats and Australian bush foods. Her favourite cooking style is Asian and French and she enjoys learning about Australian bush tucker and incorporating it into everyday menus. Jo loves the taste, texture and presentation fresh asparagus offers and feels it makes and average dish look superb. Her favourite ways of cooking asparagus is to blanch in boiling water for 2-3 minutes then drain and toss in oil and salt and pepper or fresh garlic in a hot pan. She also likes to serve it with a nice cut of steak - cooked medium. She impressed the crowd at the 2005 Celebrate Asparagus Festival with the recipe she presented at the cooking stage: Deep Fried Garfield Barramundi with Warm Asparagus Salad, which featured farmed local barramundi and fresh asparagus picked only hours earlier just before the farmers' market.
