Justin and the team celebrate this by creating a range of stylish modern Australian dishes complemented by an extensive award winning wine list. Justin loves featuring asparagus on his menus in spring and summer when top quality local asparagus is bountiful. “I love the versatility of asparagus - there are so many simple cooking methods that can be applied with greatly varied results. Whether it’s steamed, grilled, blanched or stir-fried you get a fantastic meal or side dish. My favourite method of cooking asparagus is simply char-grilling it and serving it with fresh lemon juice and truffle oil. I find the best way to keep asparagus fresh is to stand in a vase like flowers with the tips pointing up,” says Justin.
