Justin loves featuring asparagus on his menus in spring and summer when top quality local asparagus is bountiful. “I love the versatility of asparagus - there are so many simple cooking methods that can be applied with greatly varied results. Whether it’s steamed, grilled, blanched or stir-fried you get a fantastic meal or side dish. My favourite method of cooking asparagus is simply char-grilling it and serving it with fresh lemon juice and truffle oil. I find the best way to keep asparagus fresh is to stand in a vase like flowers with the tips pointing up,” says Justin.
