The Hanen family have owned and loved working their asparagus farm in the Koo Wee Rup area for the past 21 years.
“We have been packing and exporting our product for 19 years. Asparagus is a very versatile vegetable for stir-fries, salads and roasts but our favourite ways of cooking asparagus are in soup and on the BBQ.
Our asparagus soup is a great recipe. Take 1kg of asparagus, 250 grams of chopped bacon 2 chopped onions, 4 chicken stock cubes and 2 litres of water. Brown the bacon and onions in a little butter. Add the asparagus spears chopped into small pieces (but only use the top 10 or 11 cm of the spear). Add the water and chicken stock. Bring to the boil and when the asparagus is soft use your blender to blend the soup until the asparagus is well mixed in. Season to taste and add a little thickened cream to finish if you please.
We offer farm gate sales and once a year we attend the Cardinia Farmers Market to promote asparagus and it is a terrific day.”
