
Victoria Hansen
Victoria Hansen is an award winning, freelance consultant, producer, and multimedia presenter with specific expertise in food and cooking. She has a diploma in Food Education from the University of Western Sydney, and taught Home Economics before moving into the commercial sector and eventually the media.
Victoria’s first cookbook “First Principles – The Basic Cooking Handbook” released in 2003 has sold 100,000 copies and is now in its second edition. She currently manages the BiteSize Cooking® brand of multimedia activities including the BiteSize Cooking Website and the national radio vignettes (produced and presented by Victoria), which air on over 50 Australian radio stations daily. She also consults to a number of leading Australian food and cooking related companies.

But, if I am to cook it, it’s quick and simple: a quick 30 seconds in the microwave before tossing it through a salad; char grilling it on the barbie as a side dish; cooking it in stock and pureeing it into a soup; wrapping it in thinly sliced prosciutto and char grilling it; laying spears out over a savoury ricotta filling on puff pastry and baking it; or slicing and adding it to quiches, omelettes, sandwiches, risottos, casseroles and braises.
