Organic Matters is all about embracing ingredients while in season. Along with Spring arrives the early asparagus which we feature in our menus and weekly vegetable orders. What I love about asparagus is its flavour, texture and colours. I also love its simplicity. To prepare it I simply blanch it and serve it with some aged Gouda and balsamic or served with a crab omelette or softly poached eggs.
Due to its limited production I love to feature white asparagus as the hero of any dish. Purple asparagus increasingly known for its nutritional values looks stunning with a spring lamb dish or a tasty addition to the many salad dishes that we prepare and serve.
