We love this terrific salad and the comments Mim made about growing and using her own garden fresh asparagus, “We still have an ongoing abundance of fat, juicy asparagus spears in the garden and I've been picking handfuls every few days. It's been wonderful! And it's also encouraged me to try using them in different ways (although I do REALLY love them baked!) So for lunch, it's Sichuan asparagus and tofu salad.
