​Todaro Family

John Todaro and his wife Connie have lived and farmed in the area for over 50 years. Initially John worked together with his father Sam, growing potatoes on their farm in Cora Lynn. When John’s eldest son Mark joined the business in 1994 he was keen for the family to diversify and could see that asparagus was a proven crop suited to the area.

JC & M Todaro first planted asparagus in 2001 and it now makes up half of the family’s business, with the remainder being cabbages.

Mark finds asparagus to be a unique and intriguing vegetable to grow - and so tasty to eat!

It’s remarkable how with the right conditions the spears go from nothing to fully mature and ready to cut within two days. All our family love to eat asparagus when it’s in season, whether it be in a salad, an omelette, or simply tossed in olive oil and balsamic vinegar and seared on the BBQ.”
